Bailly Lapierre makes its Crémant de Bourgogne in limestone cellars carved beneath the village of Saint-Bris-le-Vineux, and the house was there at the birth of the appellation. The Réserve blends Pinot Noir and Chardonnay with a little Aligoté and Gamay, drawn from growers across the Yonne. Expect orchard apple and lemon blossom over a soft, creamy bead, closing dry with a faint nutty note. 12% ABV, 750 mL.
